Coffee… it is good for everything!

December has arrived and that means our favourite season is here - hello, Christmas! Filled with friends, family, food and plenty of festivities, Christmas is something truly special… but would it really be complete without coffee? 

We created an extra special list last year on what to buy the coffee lover in your life for Christmas, but this year we wanted to share with you something you can make them, that even includes our signature beans.

Yes, if you didn’t know already, our beans can be purchased from our sites to use at home too. And once you try this super indulgent cake (with coffee!) you’ll be left searching for your keys. Why? Because you’ll need to zoom through our drive-thru ASAP to snap up some beans and make this mud cake to end all mud cakes.

Ingredients• 1 3/4 cup plain flour• 1 3/4 cup caster sugar• 3/4 cup unsweetened cocoa powder • 1 tsp baking powder• 2 tsps bi-carb soda• 1 tsp salt• 1 cup buttermilk• 1/2 cup vegetable oil• 2 large eggs, at room temperature• 1 tsp vanilla essence• 1 cup hot strong coffee (of course we suggest our signature TFL beans) 

Method
1. Preheat oven to 180 degrees celsius.
2. Grease two 9 inch round cake pans and line with baking paper.
3. Sift the flour, sugar, cocoa powder, baking powder, bi-carb soda and salt into a bowl and set aside.
4. Using a mixer, combine the buttermilk, oil, room temperature eggs and vanilla in a large bowl until well combined.
5. Slowly add all of the dry ingredients to the wet ingredients with the mixer on low.
6. Brew a cup of black coffee using our signature TFL beans and mix until combined
7. Equally divide the batter between the baking pans and bake for approximately 25 minutes or until a toothpick inserted in the middle comes out clean. You want the cake to be fudge like, don’t overcook it!  
8. Allow to cool completely

We’re not going to lie, it’s the cup of coffee that truly makes this cake, but what you do with it from here it limited only by your imagination. A fluffy chocolate butter cream is divine, and if you’re a true coffee lover, a coffee buttercream is simply next level. Ganache, fresh cream and berries are all options too - or combine for an incredible black forest delight. 

Either way, you won’t be disappointed - and you’ve just found an extra way to add a little coffee to your Christmas cheer!
